The Scientific way to make the perfect bacon buttie
With eight out of 10 Britains agreeing that the bacon buttie is a quintessential part of their culture, this new formula to create the perfect bacon buttie is sure to cause a stir. Everything from how to measure the crunchiness in decibels right down to the force required by your teeth to chew the bacon was measured in the Food Chain CIC’s research, which was commissioned by Danish Bacon.
Indeed, the story drew huge attention from the media not just in Britain, but also in Ireland, the USA, New Zealand and Australia, with the Food Chain CIC providing interviews for a number of these media services.
The secret to the ideal sandwich lay in how crispy and crunchy rashers were. The research found that two or three back bacon rashers should be cooked under a preheated oven grill for seven minutes at about 240C (475F). The bacon should then be placed between two slices of farmhouse bread, 1cm to 2cm thick. Full details can be found on the web site of The Danish Bacon and Meat Council
Researchers at the Food Chain CIC tested 700 variations on the traditional bacon sandwich to develop the new formula. Dr Graham Clayton, Commercial Director at the Food Chain CIC, said: "We often think it's the taste and smell of bacon that consumers find most attractive. But our research proves that texture and the crunching sound is just - if not more - important. While there was much debate within our taste panels on the smoked or unsmoked decision, everyone agreed that tough or chewy bacon is a turn-off."
