The European Communities Regulation 2073/2005 on microbiological criteria of foodstuffs is applicable to food businesses since January 2006. This regulation sets out microbiological criteria for foodstuffs, applying to all food business involved in the production, handling, and distribution of food including retailers and caterers. This training course aims to enable food business operators to gain a comprehensive understanding of the regulation requirements with a view to its application in their own business.
Those working in the Technical, Quality, Production and Research & Development areas. Participants should have a third level qualification in food science or a related discipline, together with practical experience in a technical role within a food business.
This workshop will address the following topics:
* Rationale for microbiological testing
* Legal basis and requirements of regulation 2073/2005
* Shelf life requirements of high risk ready to eat foods
* Pathogens including Listeria monocytogenes & emerging biological hazards
* Microbiological sampling plans
* Integration of microbiological criteria in HACCP systems
