An emerging risk factor - its importance, assessment and development.
11th May 2010
Highfield House, Doncaster
The food safety practices used within a business are a combination of the management systems and operating procedures it uses, linked to the level of compliance with them. Mere possession of a management system does not ensure compliance and food handlers often do not implement good food safety practices. This may be due to individual food handler factors or, more often, due to the prevailing food safety culture within a business. The concept of a business food safety culture is seen as an emerging risk factor in outbreaks, having been mentioned in two recent food poisoning inquiry reports.
This event will focus on:
* Link individual food handler behaviour to food safety culture
* Define food safety culture
* List 5 business characteristics influencing its food safety culture
* Contrast management with leadership
* Explain the importance of leadership in the formation and maintenance of a food safety culture
* Assess and improve the food safety culture within a business
